Colorful Vegetable Soup

Products for one serving:
2 medium-sized carrots, ½ head of celery, 1 onion, 3 peppers, 3-4 medium-sized potatoes, 2 tomatoes, about 20 g of butter, 1 egg, yogurt, and fresh parsley.

Method of preparation:
Clean and wash the carrots and celery. Grate them on a large grater and put them in boiling, salted water together with chopped onions. After 10 minutes, add the diced potatoes, the finely chopped peppers, and the peeled and grated tomatoes. When all the ingredients are well cooked, remove the soup from the heat and add the butter and parsley – finely chopped. Build it with the egg and yogurt, first beating them well with a few spoonfuls of the soup, and then pour the finished mixture slowly into the pot, stirring constantly.
