Ingredients:
For Dressing:
- 1/3 cup crumbled blue cheese
- 1/4 cup mayonnaise
- 4 tsp milk
- 4 tsp lemon juice
- 2 tsp minced fresh parsley
- 1 tsp Worcestershire sauce
For Lettuce Wraps:
- 1 pound boneless skinless chicken breasts, cubed
- 8 Boston lettuce leaves
- 1 cucumber, seeded and chopped
- 1 celery rib, thinly sliced
- 3/4 cup julienned carrots
- 1/4 cup hot sauce
- 1/4 cup lime juice
- 1/4 cup honey
- 1 tbsp canola oil
- 1 tsp Worcestershire sauce
- 1 tsp salt
Directions:
To Make Dressing:
- Place blue cheese, mayonnaise, milk, lemon juice, parsley and Worcestershire sauce in a small bowl.
- Mix until well combined.
- Cover and refrigerate until serving.
To Make Buffalo Chicken Lettuce Wraps:
- Heat oil in a large skillet over medium heat.
- Add chicken.
- Cook and stir for 10 minutes or until the chicken are no longer pink.
- In a small bowl, combine the lime juice, hot sauce and honey.
- Pour over the chicken.
- Bring to a boil then reduce heat to low.
- Simmer for 2 minutes or until heated through.
- Remove from the heat.
- Stir in the celery, cucumber, and carrots.
- Spoon 1/2 cup chicken mixture onto each lettuce leaf.
- Fold sides of lettuce over the filling.
- Roll up tightly and secure with a toothpick.
- Buffalo Chicken Lettuce Wraps are ready to serve.
